WHere is an easy version of a drink featured on a new menu. Designed as a party-sized premix which is loaded with the tastes associated with festive period, rendering it ideal for a celebration. Save the extra citrus syrup you can use for breakfast cocktails, sweets, or for more rounds of the drink.
Bikini Recipe
Yields 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Combine all the ingredients inside a saucepan, heat until it reaches a simmer, agitating to dissolve. Then, take off the stove and let it to reach room temperature completely. Decant into a clean bottle, seal and store in the refrigerator, where it will keep for around one month.
Preparing the Cocktail Base: Combine the specified liquids in a large bottle, let it rest for one hour, then filter it preferably using muslin, to ensure it's perfectly clear.
For serving: Add 85ml of the cocktail base into a cocktail shaker containing ice, and agitate gently for one minute until cold. Strain to a frosted cocktail glass or similar, decorate with the cranberries and finish by giving it a light spray of mandarin oil over the drink.
